  • 1 small English cucumber, (halved lengthwise, seeded and thinly sliced)
  • 1 cup cooked and shelled edamame
  • 2 medium scallions, (white and green parts, thinly sliced)
  • ½ cup loosely packed chopped fresh cilantro
