  • 5 to 7 medium to large carrots (¾th to 1 pound carrots)
  • 1 small to medium red onion (about ½ pound)
  • 1 cup plain white vinegar or white wine vinegar or apple cider vinegar
  • 1 cup water
  • ¼ cup honey or maple syrup or sugar of choice
