- 1¼ cups (packed) cooked long grain white rice (see note)

- 1 medium yellow onion, chopped

- 1 (28-oz) whole peeled tomatoes with their juices
- 2 to 3 whole chipotle peppers in adobo sauce ((see note))
- 8 cups chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin

- 2 carrots, cut into ½-in pieces
- 2 small russet potatoes, peeled and cut into ½-in pieces (should be 2 cups)
