Ingredients
- 4 cups water
- 1/3 cup kosher salt (Diamond brand; use half of others)
- 1/3 cup granulated or brown sugar
- 1/3 cup white vinegar
- 6 tablespoons packed dark brown sugar
- 4 tablespoons sweet or smoked paprika (I usually use 2T of each)
- 3 tablespoons chili powder
- 1/2 teaspoon to 1 tablespoon cayenne (a big range but adjust to taste)
- 2 teaspoons garlic powder
- 1 teaspoon ground cumin (optional)
- 1/2 teaspoon ground nutmeg
- 2 tablespoons kosher salt (Diamond brand; use half of others)
- Up to 1 tablespoon coarsely ground black pepper
- 6 pounds mixed bone-in skin-on chicken parts (or two small chickens, each in 8 parts)
- A generous squeeze of honey
- 1 teaspoon cider vinegar, plus more to taste
