- 1/4 cup (60 ml) hot coffee
- 1/2 cup (120 ml) buttermilk
- 2 large eggs, separated
- 1/2 cup (113 grams) unsalted butter, softened
- 1/2 cup (100 grams) granulated sugar
- 6 tablespoons (70 grams) light or dark brown sugar
- 1/4 teaspoon fine sea or table salt
- 1/2 teaspoon vanilla extract
- 1/4 + 1/8 teaspoon baking soda
- Just barely heaped 1/4 cup (22 grams) cocoa powder (any variety)
- 3/4 cup (100 grams) all-purpose flour
- 1 1/3 cups (3 1/2 ounces, or half of a 7-ounce bag) sweetened flaked coconut
- 3/4 cups (80 grams) chopped pecans
- 4 tablespoons (60 grams or 2 ounces) unsalted butter
- 2 large egg yolks
- 3/4 cup (175 ml) half-and-half (or a mixture of 1/2 cup milk and 1/4 cup heavy cream)
- 1/2 cup (100 grams) granulated sugar
- 2 tablespoons (25 grams) light or dark brown sugar
- 1/4 teaspoon fine sea or table salt
- 1 teaspoon (5 ml) vanilla extract or 1/2 teaspoon vanilla and 1/2 teaspoon dark rum
